Here it is, the reason it takes me so long to share recipes of my own. I have developed a really bad habit or good habit if you’ve tasted the muffins I’ve baked recently. I rarely measure and when I’m working from a written recipe, I often make undocumented modifications as I go. The results are most often spectacular, and I can replicate them while in the kitchen because I recall throwing in extra this or that. For the life of me however, I can’t tell you how much of this or that I used. What a handful is to me could be very different for someone else. Today however, I took the time to replicate the Grilled Pinapple & Toasted Coconut Muffins and made sure I measured as I went. I hope you enjoy them as much as my co-workers did!
